
Unexpected catch of the day just became lunch.
Food is a way of life and it is my inspiration. It dictates a time and place in the world which connects me with memories – old, new or in the making.
I grew up in a modest family, in a time when food was not always plentiful – nothing was wasted and everything appreciated. Restaurants were reserved for special occasions only, so my Mother taught me how to grow and transform ingredients into simple healthy food made from scratch. I was raised with her hosting dinner parties, entertaining was our excuse to try new recipes with whatever seasonal foods we had on unsuspecting friends & family.
When I left University I spent 3 years harvesting fruit & vegetables grown on Australia’s Harvest Trail, from the smallest cauliflower seeds (yes, there is such a thing) to the biggest bunch of bananas. This was the beginning of my appreciation of where food comes from, how did that perfect apple end up on your plate? Sharing these experiences alongside multinationals spiked my interest in travelling further afield, every adventure has begun with me seeking out authentic dishes and the tale that they tell about the peoples, their culture and history.
It was with this love for travel and food that I stumbled into a position where I was exposed to the delicacies of the world. Paid to travel, forage and cook in places I had never heard of with ingredients I couldn’t pronounce. I am one of the fortunate few employed by the world’s 1% to work on their private super yachts. I now find myself hosting private dinner parties with a pantry of abundance.
My approach to food is simple – fresh food made from scratch the way my Mother taught me.
